Clos Pegase '22 Carneros Napa Dijon Clone Pinot Noir
This single clone beams brick red in the glass with aromas of stone clay, sweet tobacco, spiced raspberry, red fruit, and allspice. With each sip the drinker is rewarded with smooth vanilla, and bright cherry with medium weight. The bright acidity helps direct the crunchy tannins to the front of the palate, the silky mid-palate delivers a mouth coating feel to the wine and helps drive the medium length and persistence. Pair with goat cheese stuffed dates, Cajun potatoes, roasted duck and eggplant.
Handpicked and delivered to the winery in the early morning, the clusters are then sorted and 100% destemmed. Individual blocks are given a relatively warm fermentation carried out immediately by the yeast strain Assmunhausen, originating from the Geisenheim Research Institute in Germany. Once fermentation is complete, the must is pressed and allowed to complete malolactic fermentation in barrel. Aged 9 months in 30% new French oak. The wine is then blended in tank and gently filtered before bottling.
