25% Petite Sirah, 75% Cabernet Sauvignon
Dark scarlet and purple in the glass, the wine throws vibrant aromas of plum, and cassis with a touch of dried herbs and spice. On the palate, the refined tannins support a dark fruit core of ripe plum with black cherry, alongside more subtle notes of graphite, oak shavings and cigar box. Graceful and complex.
Hand-picked and delivered to the winery early morning, the clusters are sorted and 100% destemmed. The must was pumped to a tank for a 4-day cold soak followed by a relatively warm fermentation carried out by a yeast strain, D254, isolated from the Bordeaux region of France. Once fermentation is complete the must is pressed and allowed to complete malolactic fermentation in the barrel. Aged 18 months in 30% New and 70% used French oak. The wine is gently filtered before bottling.
